Spirit Description
Our White Rye is 64% Danko Rye, 21% Wapsie Valley corn, and 15% malted barley and rye. It is distilled twice through our 7-plate column and then proofed down to 100, creating a clean finish with strong notes of peppercorn and spice.
Information & History
White Rye—sometimes called "white dog" or "moonshine"—is whiskey in its purest, most unfiltered form. Long before oak barrels and aging warehouses became the standard, early American distillers were making unaged spirits like this from local grains. These clear whiskeys were often consumed right off the still or shortly after, offering a raw and lively taste of the grain itself.
Our White Rye Whiskey is a nod to that early distilling tradition. Made from a rye-based mash, it's distilled and bottled without aging—giving you a glimpse of the spirit before the oak has its say. Without the influence of charred barrels, the natural flavors of the grain shine through: bright, bold, and a little bit wild.
It also makes an excellent canvas for experimentation. Thanks to its clean, grain-forward profile, White Rye is one of the most versatile spirits we produce—perfect for infusions, creative cocktails, and anyone curious to taste whiskey before time mellows it out.
