Information & History
History
Light rum is often associated with neutral flavor and mass-produced mixers—but its roots tell a much richer story. Rum itself dates back to the 17th century Caribbean, where enslaved workers on sugar plantations discovered that molasses—a thick byproduct of sugar refining—could be fermented and distilled into a powerful, flavorful spirit. Over time, rum production spread throughout the Americas, evolving into distinct regional styles.
What is Light Rum?
“Light rum” (also called white or silver rum) originally emerged as a cleaner, more mixable version of traditional dark rums—especially popular in Cuban-style cocktails like the Daiquiri and Mojito. However, many commercial light rums today are stripped of character through heavy filtering.
At Barrel 21, our Light Rum goes back to the source. Made from 100% Caribbean Black Pearl Molasses, we distill it in a way that preserves the rich base flavors—resulting in a spirit that’s clean and versatile, yet still full of personality. Look for notes of honey, caramel, and warm molasses in every sip. It's light rum, done the craft way.
