Spirit Description

Our Barrel Rested Gin is distilled from corn and wheat with a combination of juniper, coriander, sweet almonds, cubeb berries, galangal, angelica root, and orris root. It is then allowed to rest in a used barrel until fully developed.

Information & History

While most people think of gin as a crystal-clear spirit made for martinis and G&Ts, barrel-aged gin has a long—and slightly rebellious—history. Back in the 18th and 19th centuries, before stainless steel tanks and glass bottles became the norm, spirits were stored and transported in wooden barrels. That meant gin, like whiskey, often picked up color and character from the wood during its journey.

But barrel-aging also became a bit of a rule-breaker’s move. During Prohibition and other dry spells in history, distillers would sometimes age gin to mask the harshness of quick, bootleg batches—or to create something unique that stood out from mass-market brands. In more recent years, the craft spirits movement has brought this tradition back—on purpose this time—for its bold, layered flavor.

At Barrel 21, our Barrel Rested Gin is aged in used whiskey barrels to bring out rich notes of oak, spice, and vanilla that play beautifully with gin’s classic botanicals. It’s a perfect hybrid for whiskey lovers dipping their toes into gin—or gin fans looking for a new twist.

Because sometimes, breaking the rules just tastes better.
