Our first American Single Malt Whiskey is 100% Speyside Malt. It has been aging in a used, charred 53-gallon bourbon oak barrel for more than 6 years and we are ready to release it! In this whiskey you'll find nutty and sweet aromas combined with abundant notes of fruit and spice, with the slightest of smoke on the backend.

Our Wapiti American Single Malt Whiskey proudly follows in that tradition, using locally sourced malted barley and aging it in new oak barrels to create a bold, complex spirit that honors its roots while offering something entirely our own.
Traditional Scotch often uses peated malt, dried over peat smoke to create that signature smoky flavor. At Barrel 21, we opt for kiln-dried malt instead—letting the natural richness of the grain shine through without the heavy smoke. The result is a smooth, toasty whiskey with notes of roasted grain, vanilla, and subtle spice.
