White-Tail Pennsylvania Straight Bourbon Whiskey
White-Tail Pennsylvania Straight Bourbon Whiskey is made from all Pennsylvania grains. Our mash bill consists of 70% Wapsie Valley Corn, 15% Danko Rye, 10% Malted Barley, and 5% Malted Rye. This whiskey is aged in new, 53-gallon white oak barrels with a #4 char for a minimum of 2 years. It has a soft nose, displaying hints of oak, caramel, and stonefruit. The palate is sweet and full, with notes of light baking spices, red fruits, vanilla, and oak.
Woodcock Pennsylvania Straight Rye Whiskey
Woodcock Pennsylvania Maple Rye Whiskey is made from all Pennsylvania grains. Our mashbill consists of 78% Danko Rye, 6% Wapsie Valley Corn, 11% Malted Rye, and 5% Malted Barley. This whiskey is then aged in new, 53-gallon white oak barrels with a #4 char for a minimum of 2 years. The nose conveys the impression of lavender, mint, and butterscotch On the palate, expect floral and earthy notes, with accents of brown sugar and black peppercorn.
Woodcock Pennsylvania Straight Rye Whiskey – 6 year Single Barrel
Our 6-year Woodcock Rye Whiskey is the same mash bill as the Rye Whiskey, which is also aged in new 53-gallon oak barrels with a #4 char but for 6 years. This single barrel whiskey was handpicked by the distiller as a limited release. The additional time in the barrel amplifies the aromas and flavors of butterscotch and peppercorn, creating an even smoother and elegant finish to the spirit.
American Single Malt Whiskey
Our first American Single Malt Whiskey is 100% SpeysideMalt. It has been aging in a used, charred 53-gallon bourbonoak barrel for more than 6 years and we are ready to releaseit! In this whiskey you'll find nutty and sweet aromascombined with abundant notes of fruit and spice, with theslightest of smoke on the backend.
Woodcock Maple Rye Whiskey
Woodcock Pennsylvania Maple Rye Whiskey is our Rye Whiskey, which is then rested in barrels after they have had maple syrup aged in them. The subtle sweetness of the maple syrup blends perfectly with the peppery spice and earthy notes of the rye whiskey, creating an incredibly balanced maple rye whiskey.
White Rye Whiskey
Our White Rye is 64% Danko Rye, 21% Wapsie Valley corn, and 15% malted barley and rye. It is distilled twice through our 7-plate column and then proofed down to 100, creating a clean finish with strong notes of peppercorn and spice.
Buckwheat is technically a seed, and this whiskey is 90% buckwheat and 10% malted rye. It was aged in a new charred 53-gallon oak barrel for 4 years. The aroma is grassy and earthy with tasting notes of buckwheat that are nutty and dry with hints of caramel and vanilla.
Our new Agave Spirit is made from 100% Blue Agave and was rested in both new and used oak barrels for 3 months. This Reposado style agave spirit is smooth and balances the sweetness of the agave with the oaky undertones of the barrels.
Our corn and wheat-based vodka is distilled two times through our 7-plate column, then filtered multiple times using activated carbon. This results in a clean and smooth vodka, with slight grain sweetness, that is a perfect addition to many mixed drinks.
The new Pickle Vodka was created by infusing our vodka base with fresh pickles, some from the local Happy Valley Pickle Company, to create a unique pickle-flavored vodka perfect for a Bloody Mary or a briny pickle martini.
Our Jalapeno Vodka was created by infusing our neutral vodka base with fresh jalapenos to create a perfectly balanced spirit with just the right amount of heat for a spicy Bloody Mary or a Moscow Mule with a kick.
Our gin begins with a neutral spirit base and is distilled twice through our 7-plate column. During the second distillation, we add our botanicals that include juniper, coriander, licorice root, cardamom, lemon peel, lime peel, orange peel, and orris root. It has distinct herbal and citrus flavors, with strong notes of pine and a dry finish on the end.
Barrel Rested Gin
Our Barrel Rested Gin is distilled from corn and wheat with a combination of juniper, coriander, sweet almonds, cubeb berries, galangal, angelica root, and orris root. It is then allowed to rest in a used barrel until fully developed.
Our Light Rum is produced using 100% Caribbean Black Pearl Molasses and is distilled in a way to maintain the rich character of the molasses. The result is a light rum that has sweet flavors of honey, caramel, and, of course, molasses.
Our Spiced Rum is made with Caribbean Black Pearl Molasses and distilled in a way to maintain a lot of the dark and rich character of the molasses. After distillation is complete, we spice it with a blend of cinnamon, cloves, star anise, vanilla bean, orange peel, and allspice. After a week or so on the spices, we age it in a used whiskey barrel to create a unique rum with aromas and flavors of spices and citrus.
Navy Strength Rum
Our Navy Strength Rum is distilled from Black Pearl Caribbean Molasses. It is then aged in used Bourbon barrels. We release one barrel at a time when it has reached maturity. Bottled at 114 Proof, it displays characters of molasses, bubble gum, and oak.
Our Limoncello is made from a neutral spirit base which is distilled to 190 proof. We then add fresh lemon zest to macerate over the course of 45 days, lending bright colors and flavors to the spirit. A cane sugar simple syrup is added to create the balance of bold citrusy lemon notes with sugary sweetness for a spirit that is perfect served over cold ice.
Apple Brandy includes 100% apples from our own orchard at Kunes Farms in Frenchville, PA. After distillation it is then aged in used bourbon barrels for at least two years. With rich leathery aromas the taste is like drinking a ripe apple right out of the glass, with notes of oak and vanilla that balance perfectly with the fruitiness of the spirit.
